In My Kitchen: Caprese Sandwiches

I love caprese sandwiches! For vegetarians (or anyone really), they’re a fresh, yummy, healthy sandwich option. They can get a little pricey at restaurants and cafes, though, so I often like to make them myself at home. It’s easier than you think!

All you need is:

  • Fresh mozzarella, part-skim or whole milk. You can find this in the gourmet cheese section of any grocery store
  • Sourdough or ciabatta bread
  • Tomatoes
  • Fresh basil
  • Balsamic vinegar

Caprese sandwich 1Simply slice the mozzarella round into slices, and cut up the tomato. Wash the basil leaves and pat dry with a paper towel.

The most important step is to toast your bread – toasting sourdough is necessary to bring out its flavor, and toasting ciabatta bread is just delicious.

Stack the ingredients on the bottom bread, drizzle with balsamic vinegar and top with the other slice of bread.

Voila! Super easy, fresh and delicious.
