Israeli couscous (also known as pearl couscous) is a versatile grain. Use different ingredients with it to make totally different flavor combinations.
You’ll need:
- 1 1/4 cup water
- 1 cup pearl couscous
- 3/4 tsp. kosher salt
- 1 tbsp. olive oil
- 3/4 cup sliced scallions
- 1 garlic clove
- 1 tsp. lemon zest
- 1/4 tsp. pepper
Instructions:
- In a 2-qt saucepan, heat water to a boil. Add couscous and 1?2 tsp of the salt. Cover and reduce heat to low; simmer 9 minutes, stirring once.
- Meanwhile, in a small skillet, heat oil. Add scallion and saut? 4 to 5 minutes until softened. Add garlic and cook 1 minute. Stir in lemon zest.
- Stir scallion mixture into couscous; sprinkle with remaining salt and the pepper. Serve.
