In My Kitchen: Lemon Scallion Israeli Couscous [VEGAN]

Israeli couscous (also known as pearl couscous) is a versatile grain. Use different ingredients with it to make totally different flavor combinations.

You’ll need:

  • 1 1/4 cup water
  • 1 cup pearl couscous
  • 3/4 tsp. kosher salt
  • 1 tbsp. olive oil
  • 3/4 cup sliced scallions
  • 1 garlic clove
  • 1 tsp. lemon zest
  • 1/4 tsp. pepper

Instructions:

  1. In a 2-qt saucepan, heat water to a boil. Add couscous and 1?2 tsp of the salt. Cover and reduce heat to low; simmer 9 minutes, stirring once.
  2. Meanwhile, in a small skillet, heat oil. Add scallion and saut? 4 to 5 minutes until softened. Add garlic and cook 1 minute. Stir in lemon zest.
  3. Stir scallion mixture into couscous; sprinkle with remaining salt and the pepper. Serve.
