In My Kitchen: Oatmeal Raisin Cinnamon Chip Cookies

I love oatmeal raisin cookies. Some people complain they can be a bit boring. You’ll make their day with these cookies, which use Cinnamon Chips for a burst of seasonal flavor!

You’ll need:

  • 1 cup / 2 sticks unsalted butter, softened
  • 1 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 1/2 cups quick cooking oats
  • 1 2/3 cups cinnamon chips
  • 3/4 cup raisins

Instructions:

  1. Preheat oven to 350 degrees.
  2. Beat butter, brown sugar and granulated sugar until creamy.
  3. Add eggs and vanilla; beat well.
  4. In a medium bowl, combine flour and baking soda. Gradually add to butter mixture, beating well.
  5. Stir in oats, cinnamon chips and raisins (batter will be stiff). Drop onto cookie sheets.
  6. Bake 10-12 minutes or until lightly browned. Cool on wire rack.
